The Hanukkah holidays are upon us and, while I'll welcome the opportunity not to get out of bed early on winter mornings, the pressure is on to find ways to entertain the kids on the predicted rainy days.
Baking is always an activity that both my son and daughter enjoy but, as Official Washer Up & Kitchen Counter Cleaner, I am careful to suggest recipes that use minimal kitchen equipment, require the minimum amount of economical ingredients, and are guaranteed to produce delicious results every time.
These Beat 'no Bake Chocolate Chip Muffins fit the bill perfectly and today's dark clouds act as a reminder to stock up on pantry essentials before the school holidays begin and the rain hopefully starts to fall.
NOT JUST FOR KIDS CHOCOLATE CHIP MUFFINS
1 1/2 cups plain flour
1/2 cup sugar
2 teaspoons baking powder
1 cup chocolate chips
1 egg
1/3 cup melted butter
pinch salt
1 cup milk
1: Mix the dry ingredients in a large bowl and add the chocolate chips.
2: Beat the egg, melted butter and milk together and stir into the dry ingredients mixing till just combined.
3: Grease muffin tin - or line tin with cupcake papers - and spoon in mixture.
4: Bake at 180 C for 20 to 25 minutes.
COOK'S NOTES: The secret to successful muffins lies in the mixing. Mixing should be done by hand and kept to a minimum as wet ingredients are added to dry with a few quick turns of the spoon. This will leave the batter lumpy but this is the way it should be or your muffins will be tough and flat.
