Students who regularly attend Delicious! classes will often hear me talk of ideal marriages of flavors. Honey, soya and ginger compliment one another perfectly as do basil, tomatoes and white cheese. Mint and rosemary are perfectly partners for lamb while tarragon and sage add an entirely new dimension to chicken. Chocolate happily matches with orange and balsamic vinegar brings out the flavor of strawberries. And so the list continues.
This week's Delicious! recipe pairs fresh pears with blue cheese as this too is a match made in culinary heaven. If you're pressed for time simply add slices of ripe pear to a green, garden salad and top with crumbled blue cheese and toasted walnuts. Alternatively, grab a mixing bowl and combine these classic flavors in these simply scrumptious, savory muffins which are substantial enough to serve with salad as a light, vegetarian meal.
PEAR AND BLUE CHEESE MUFFINS
2 cups plain flour
1 tablespoon baking powder1 teaspoon salt100g blue cheese, crumbled1 cup grated cheddar/emek cheese8 spring ontions, white part only, finely chopped1/4 cup chopped parsley2 ripe pears, peeled, cored and chopped
1/3 cup sunflower/canola oil1 cup milk1 XL egg
1: Sift flour, baking powder and salt or alternatively place all ingredients in a bowl and stir with a whisk to aerate.
2: Add cheeses, onions, parsley and pears and mix well3: In a seperate bowl combine oil, milk and egg and add to dry ingredients.
4: Mix gently until well blended, spoon into muffin tray and bake at 200°C for 20 minutes.
