Back in South Africa we had a choice of just two different types of matzah: cardboard and whole-wheat cardboard.
Last year was my first Pesach in Israel and I was astounded to discover that the local range of matzah included egg and garlic, onion and herb, apple and cinnamon, lite, sodium-free, salted and more...all of which taste of...cardboard.
There's a limit to how long you can fill up on matzah with butter or matzah with cottage cheese without wanting to gag. This zesty tuna topping is one that you'll enjoy the whole year through - it is ideal on bagels or tossed through cold pasta noodles - and it delivers so much flavour in every bite that it makes those never-ending cardboard squares seem almost palatable.
PESACH FRIENDLY MEDITERRANEAN TUNA TOPPING
1 can tuna, drained and flaked
4 tablespoons olive oil
2 tablespoons fresh lemon juice
3 tablespoons chopped pickled cucumber/capers
1 tablespoon grated lemon zest
½ finely sliced red onion
½ cup chopped parsley
Handful cherry tomatoes, halved
1: Combine ingredients....it's that simple!
COOK'S NOTES: This topping can also be turned into a wonderful salad by adding boiled baby potatoes and green beans or cold pasta noodles when Pesach is over.
