I have a loyal student who is so keen for me to do a 'Fabulous Fish' class that she's done everything but lead me to the water's edge and put a fishing rod in my hand.

SESAME NOODLE SALAD WITH SMOKED SALMON
400g egg noodles
1/2 cup soya sauce
2 tablespoons brown sugar
1/4 cup sesame seeds, toasted
2 spring onions, chopped
1/4 cup chopped chives
2 small cucumbers, thinly sliced
1 cup mint leaves
200g smoked salmon, roughly chopped
1: Cook the noodles in salted, boiling water for approximately 5 minutes or until just tender then drain and set aside.
2: Combine the soya sauce, brown sugar and sesame seeds in a large bowl and add the noodles, spring onion, chives, cucumber, mint and salmon and toss gently.
COOK'S NOTES: Smoked salmon may be substituted with fresh salmon or fresh tuna. Brush fish with sweet chilli sauce (available from any supermarket) or coat with sesame seeds then pan fry till just done, slice and add to the noodles.
